Processing reports manually is as simple as selecting the report in your Inbox folder (don’t move it to another folder), mark it as read and then delete it.
If the report was not broken, you should now see the special report icon on your sent item.
I’ve then tried it with a “Read receipt” and although I do get a message back, I still don’t see any tracking information within the sent item.
How can I see if my message was read or delivered successfully within the sent item?
Switch it away from cached mode and try using Online mode…this should fix any issues you have.
You also have the option to obtain the delivery signature while tracking your package.

The person who receives the task request becomes the temporary owner of the task.
This person can decline the task, accept the task, or assign the task to someone else. If the recipient accepts the task, that person becomes its permanent owner.
Unfortunately, for my user, the issue did not go away…the message still did not show up. The next step is to check spam folders and junk folders to make sure that the message isn’t getting held up there.
